I spent many months on a carb free diet to get my health back and I realized that I really like bread, however I also realized how many really bad things are in bread you buy at the grocery store. Why are there so many ingredients? I would buy a standard bread from the local grocery and the ingredients are:
Enriched Wheat Flour (flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Water, Yeast, Soybean Oil, Contains 2 Percent Or Less Of: Sugar, Salt, Natural Flavors, Calcium Propionate And Sorbic Acid To Retard Spoilage, Wheat Gluten, Monoglycerides, Sesame Seeds, Dextrose, Malted Wheat Flour, Datem, Calcium Carbonate, Malted Barley Flour, Dehydrated Sour Dough, Guar Gum, Rye Flour, Soy Lecithin, Nonfat Milk*.
WHY? I decided the only way to go was make my own and I set off in search of answers. I found this woman named Mary from Mary's Nest and she is an amazing, sweet, lovely woman with a HUGE amount of knowledge about healthy eating and learned to make bread with two ingredients:
That's it. I add a little salt as well but that isn't need honestly. I made a couple different types of starter. The one on the left is rye and if you want almost instant results from your starter go with rye. For a very long time I maintained a wheat flour one and a rye one and in the end I let the Rye go and stuck with the Wheat.
As time went on and I made more, they got better and better. My starter got more active, and my bread got super yummy!
Then I started thinking about all the other things that I eat that are loaded with stuff that isn't needed. I started learning how to make other things like English muffins
and then I decided I wanted some "no sugar" jam for my toast so I made some of that too. Next year my strawberry garden will be massive and I will be able to make it from my own organic grown strawberries but this year I bought some organic at the local health food store
During all this I was working on my yard and garden, getting ready for Spring when I could grow! More on that later.
I now make all my own bread, cakes and pies. Ill do a post on those adventures soon. I pay about $5.00 for a 5lb bag of flour and a bag will make 3 loaves of bread. That's comes out to about $1.65 a loaf. I was paying $3.99 for a loaf of bread that was loaded with a bunch of stuff (including sugar) that wasn't adding anything to the bread and probably killing me in the process!
The bread i was buying has several "toxic" ingredients! Soybean is related to heart risk and they have learned there are a ton of health issues that come from consuming soy, especially for men! Sorbic acid is horrible and has dangerous health effects. Why would they put this in food? It causes intestinal upset, headaches, increase in urine, nausea, skin rashes and more! Monoglycerides is a form of fatty acid and is a preservative in many baked goods. This is a list of health issues this stuff creates:
AND This stuff is in almost everything! I won't even mention the effects of Datem or the effects of all the sugars in the bread, you get the point. I started wondering if someone is trying to kill us off or make it so we need constant medical help, putting all this crap in our food.
I have had many revelations since this time and I have complete changed how I eat and what I buy from the store. The result is I sleep better, weigh a lot less, feel better, don't have nearly the aches and pains I had that I just thought were a stage of "getting old" and I am regular and don't suffer from any gas, bloating or digestive issues!
I have never been a really bad eater. I was fairly balanced in what I ate and thought I did a good job of eating the right things yet I still felt like hell. I stayed away from the obvious preserved foods, the problem is I had NO IDEA how many preservatives were in simple everyday foods like bread!
I really think there is a conspiracy going on with food. Feed the people all the things that are bad for them so that the medical and pharma can make large amounts of money from people being sick! If you have health issues, no matter how old you are, I would be willing to bet it is because of the food you are eating and I urge you to go back to the basics and change everything about your food consumption because something is very wrong!
Eating healthy and correctly does NOT mean you eat tofu and alfalfa sprouts, which is what I thought it was. It is about making it yourself from whole, organic and pure products and growing your own food whenever possible! Eating a peanut butter and jelly sandwich is still ok as long as you make your own bread, jelly and peanut butter (which is SUPER easy by the way) and you will save so much money!
The only issue is time. You do have to make it yourself but honestly, you have the time if you spend an hour a day sitting in front of a computer or a tv! You might have to adjust your time a bit but in the end, you will feel better, look better and live your life pain free without the need for doctors!
