As you know I have been on this massive make my own quest. I have had my eyes opened to the horrors of the food industry and as we face food shortages and inflation I decided I needed to learn to make as many things myself as possible.
I love Cheesecake! Plain and pumpkin are my favorites and I decided to make one with things I make from scratch. So I made sour cream which is actually really easy. Sour cream is just plain yogurt with the whey removed. So you can start by making your own yoghurt or purchasing a container from the grocery (organic of course) and you empty the contents into a strainer lined with cheesecloth. Place the strainer over a bowl and put it in the refrigerator over night. In the morning you will have cream cheese in the cheesecloth and whey in the bowl. Don't throw out the whey! You can use the whey for other things. I like to use whey in my bread in place of the water for a protein boost and its a better tasting bread! You can find the entire instructions for making cream cheese at Marys Nest. This woman is amazing and teaches the old school methods of cooking and preserving.
The other thing you will need is graham crackers and you can make these yourself too! I used this recipe from King Arthur Baking Company and I love it. I make them a lot for recipes and for nibbling on with a nice hot cup of tea.
In the end you have this amazing cheese cake and a lot of pride in the fact that you made everything yourself! This one cracked a bit on the top but it was amazing to eat and super rich! We ate a couple pieces over that week and the rest I sliced and wrapped and put in the freezer for long term storage. Once defrosted it is just as good as fresh made!
There are a lot of steps to this and it might seem a little overwhelming and like a long process but you do it in stages and it isn't too terrible and there is no better feeling when you are enjoying that cheese cake then knowing you made every ingredient yourself and that you are eating and feeding your family in a clean (no preservatives) way!

It is planting season as you know and we have been working hard on getting everything planted! We found this method called Back To Eden Gardening and it just made sense for our front yard. I really wanted to increase our planting area and find a way to save on water and this method appears to be the answer!
