With owning chickens comes the complicated task of preserving eggs. We don't eat eggs everyday and we get a lot of eggs everyday. I will have days when I am cooking and baking when I will use a lot of eggs but that only happens a couple times a month
Of course, we share the wealth with family and friends but we still have a lot of eggs so I went in search of a way to preserve eggs the best way and for as long as possible. I found the method of "water glassing"
Water glassing is an old way of preserving eggs long term.
I should mention here before I go on, you CAN'T water glass store bought eggs. In the store bough world of eggs, they are required to wash the eggs which removes the "bloom" that comes from the hen to protect the eggs. You can only water glass eggs that are fresh laid.
You mix lime and water together, 1 oz to a quart of water. You can find this lime where ever they sell canning supplies and it is also known as pickling lime. You mix the two together and put the eggs in the container. I add to and remove eggs from this all the time and they stay fresh and yummy for up to a year!
If you aren't thinking you need chickens...... yet, Ill say it, you need chickens! Not only are they fabulous and interesting animals with personalities but they grace us with so much abundance! These girls love to come and visit when I am cooking or reading in the kitchen. They are a joy and I am not really sure how I spent my whole life without their companionship ♥

It is planting season as you know and we have been working hard on getting everything planted! We found this method called Back To Eden Gardening and it just made sense for our front yard. I really wanted to increase our planting area and find a way to save on water and this method appears to be the answer!
